Ulyanovsk UNESCO City of Literature – with Elena Ezhova, restaurateur, and Denis Kashin, brand chef - is a part of “Breads of the Creative Cities” International Gastronomy Project

The project was launched by Tucson (USA) UNESCO City of Gastronomy and the Creative Knowledge Foundation. The goal of the project is to create a book with recipes from different countries. Ulyanovsk decided to share the recipe for ‘kolobok’ (‘kolobyatka’). As you remember, Simbirsk is considered the birthplace of the ‘kolobok’. According to Vladimir Dahl’s dictionary, the residents of our city used the word ‘kolobyatka’, which meant ‘the last dough from the kneading bowl’ – sounds similar to the story of the ‘kolobok’ from a fairy tale, doesn’t it?

Residents of about 100 UNESCO cities will learn the step-by-step recipe for the “kolobok”. The book will be available in paper and online. Everyone interested, no matter where they live, will have a chance to get acquainted with the biography of the chef from Ulyanovsk and read about the restaurant where this fabulous dish is served.

Representatives of the Turkish delegation from the city of Kahramanmaraş were the first to try the “kolobyatka”, having visited Ulyanovsk at the invitation of the Ulyanovsk UNESCO City of Literature Directorate to the “Arcadia” Festival. The brand chef and management presented the dish. Turkish colleagues were delighted with the treat - they tried such a dish for the first time and admired the gastronomic gift, and also talked with Denis Kashin and his team.
